As I wrote last week, at least 51% of human-caused greenhouse gas emissions come from livestock production. Therefore, one of the best things… I mean, probably the best thing you can do for the environment if you’re ready to take on this ‘challenge’ is go vegan. To help you along, a new writer over on Eat Drink Better, Tanya Sitton, has a tremendous guide on “vegan cooking for beginners.” Here’s the intro:

Recent food documentaries and books such as Forks Over KnivesFood Inc., and Eating Animals have increased consumer awareness about the health benefits of a plant-based diet and about the ugly realities of industrial meat production; consumption trends have shifted accordingly. Vegan, vegetarian, flexitarian, or simply veg-curious, more people than ever before are interested in plant-based cooking.
